Comments: Most of the seeds produced go into spice mixes and food flavourings, while the production of essential oil remains relatively small. As a recent development in the flavouring industry, CO2 and hexane-extracted Cardamom are in vogue and in the product table we give you an indication of their principal constituents compared with a steam-distilled oil.
