Among other ingredients, manuka honey contains hydrogen peroxide, which gives it its antibiotic properties. However, the major anti-bacterial action is due to another substance called MG (methylglyoxal). Although it is present in all types of honey in lower concentrations, in manuka honey, the concentration is large enough to give noticeable antibacterial effect.

The quality of manuka honey is specified in UMF (Unique Manuka Factor) which gives an indication of the strength of MG in the honey. Manuka honey is available in various UMF strengths. To be an effective treatment for infections, the UMF should be above 10. Manuka honey with a UMF rating of 10 or above is also called active manuka honey.
